Caramelized Onion Mustard

We slowly caramelized a blend of red, Maui Sweet, Walla Walla, and yellow onions before folding them into the mustard seed. The sweetness of the mustard melds into the spicy seeds & sharp vinegar to create a deep, balanced  mustard. We've left chunks of onion for a textural experience. The test jar went fast with a loaf of chunky bread & Pickle's Pantry terrines! This limited release won't be around long!
